Nothing relieves the summer heat like a bowl of Beppu reimen (chilled noodles). Beppu’s reimen is a noodles, which are often homemade from buckwheat flour, are slightly chewy (and extremely healthy). The broth is cold and clear while the toppings vary between chefs, but mostly consist of refreshening seasonal vegetables.
